Name: Banana & Chocolate Chip Muffins

Ingredients: 2⅔ cups Edmonds Banana Cake Mix; 1 egg; 2 Tbsp vegetable oil; ½ cup cold water; 2 mashed ripe bananas; ½ cup chocolate chips

Ingredients

3 large ripe bananas, mashed
¾ cup brown sugar (150g)
80g butter, melted (or Olivani Spread)
1 egg
1½ cups Edmonds Standard Grade Flour (225g)
1 tsp Edmonds Baking Powder
1 tsp Edmonds Baking Soda
pinch salt
¾ cup chocolate chips (130g)

Method

Preheat oven to 160oC fan bake or 180oC bake. Line a 12-hole muffin tin with paper cases.
Stir bananas, sugar, butter and egg together in a large bowl until well combined.
Sift in flour, baking powder, baking soda and salt. Add chocolate chips and fold in until just combined.
Divide mixture evenly between paper cases. Bake for 20-25 minutes, until muffins are golden brown and spring back when lightly pressed on top.
Leave to cool in tin for 5 minutes before transferring to a wire cooling rack.

TIPS
• Use an ice cream scoop to transfer the mixture into paper cases - it’s quicker, easier and less messy!

Do they have to have paper cases?

Hi Pauline,

You can bake them directly in a greased or non-stick muffin tin, just make sure to lightly butter or spray each cup so they don’t stick. Paper cases simply make cleanup easier and give a more polished look, but they won’t affect the bake or flavour.
