Do they have to have paper cases?

Hi Pauline,
You can bake them directly in a greased or non-stick muffin tin, just make sure to lightly butter or spray each cup so they don’t stick. Paper cases simply make cleanup easier and give a more polished look, but they won’t affect the bake or flavour.
