Fruit Sponge

Make sure the fruit is hot or the sponge topping won’t cook properly. Serve with plenty of cream.

Method

  1. Preheat the oven to 190˚C.
  2. Place the sweetened stewed fruit in an ovenproof dish, cover and keep hot while you make the sponge topping.
  3. Put the butter, vanilla and sugar into a bowl and beat hard until pale and creamy.
  4. Beat in the eggs one at a time, beating well after each addition. Sift on the flour and baking powder and fold into the mixture, followed by the milk. Spoon the sponge mixture over the fruit.
  5. Bake for 40 minutes or until the sponge springs back when lightly touched. Serve hot dusted with icing sugar

Would be good to know bake type , ypu tested on e.g. fan or regular bake, ovens now have options. Brown after 20 minutes on fan bake.

One of my favourite puddings made by my mum sixty odd years ago. My favourite fruit was black plums, don't see them around these days. I love Edmonds recipes, have my mothers books and have bought new ones.

My mum made this 66 years ago. She still makes this pudding. I used to rush home from school. Walking up the long drive way, on a farm. I could smell the Fiejoa pudding in the oven. Yummy. I make now. Our fav. I use Edmonds products all the time, the best. Thankyou
